  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Top with pineapple chunks.
  3. In a mixing bowl, whisk together soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and red pepper flakes until combined.
  4. Pour the sauce over the chicken and pineapple.
  5. Cover and cook on low for 4 to 6 hours until chicken is cooked through and tender.
  6. Shred the chicken using forks and return to the crockpot.
  7. Mix cornstarch with water until smooth; stir into the sauce.
  8. Cook on high for an additional 10 to 15 minutes to thicken.
