  • 2 cups mashed sweet potato (34 large sweet potatoes)
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a 9 or 10-inch cake pan.
  2. In a food processor, combine coconut flour, cocoa powder, sugar, baking powder, salt, mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla extract. Pulse until smooth.
  3. Pour the batter into the prepared pan and bake for 45-50 minutes or until a skewer inserted in the center comes out clean.
