  • 3 cups grated green pepper
  • 3 cups grated pickling cucumber
  • 1 cup minced onion
  • 2 cups apple cider vinegar
  • 1 cup granulated sugar
  • 1 tablespoon kosher salt
  • 1 tablespoon mustard seeds
  • 1/2 teaspoon celery seeds
  • 1 teaspoon red chili flakes

Instructions

  1. In a non-reactive pot, combine the grated green pepper, cucumber, and onion. Stir in 1 cup of apple cider vinegar and bring to a simmer for about 30 minutes until softened.
  2. Drain the vegetables and return them to the pot. Add the remaining vinegar, sugar, mustard seeds, celery seeds, and red chili flakes.
  3. Simmer for an additional 5 minutes. Ladle into sterilized jars and seal. Process in a boiling water bath for 10 minutes.
