  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 8 ounces tomato sauce
  • 4 ounces water
  • 2 cups water (for rice)
  • 1 cup long grain rice
  • 1 teaspoon salt (for rice)
  • 1 tablespoon vegan butter
  • 1/4 cup cilantro (for cilantro lime rice)
  • 2 tablespoons lime juice (for cilantro lime rice)
  • Romaine lettuce (chopped and rinsed)
  • 1 can whole corn
  • 1 can black beans
  • Green onion (for garnish)
  • Avocado (for garnish)
  • Cilantro (for garnish)
  • Red onion (for garnish)
  • Pico de gallo (optional)
  • Guacamole (optional)

Instructions

  1. In a large skillet over medium heat, brown the ground turkey for about 5 minutes. Add diced onion and garlic; sauté until translucent.
  2. Stir in garlic powder, cumin, chili powder, paprika, salt, oregano, tomato sauce, and water. Simmer for 15 minutes.
  3. For the rice: In a pot or rice cooker, cook rice with water and salt according to package instructions. Once cooked, stir in vegan butter, lime juice, and cilantro.
  4. Assemble each bowl with a base of cilantro lime rice topped with turkey filling and desired toppings.
