  • 1 pound lean ground beef
  • 15 ounces canned black beans (drained and rinsed)
  • 8 ounces canned corn (drained)
  • 2 cups halved cherry tomatoes
  • 2 cups shredded Fiesta blend cheese
  • 16 ounces Catalina dressing
  • 9 ounces Nacho Cheese Doritos (crushed)
  • 2 cups shredded iceberg lettuce

Instructions

  1. Cook rotini in a large pot of boiling water according to package instructions. Drain and rinse with cold water.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain grease and mix in taco seasoning and water; cook until liquid evaporates.
  3. In a large bowl, combine pasta, beef, black beans, corn, tomatoes, and cheese.
  4. In a small bowl, whisk together Catalina dressing and sour cream; pour over the pasta mixture and stir gently.
