  • 2 pounds ground beef (or ground turkey)
  • 1 yellow onion, finely diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 can (6 ounces) tomato paste
  • 1 can (28 ounces) diced fire-roasted tomatoes, undrained
  • 2 cups low sodium beef broth (or 1 cup beer + 1 cup beef broth)
  • 1 bay leaf
  • Shredded cheddar cheese (for garnish)
  • Seeded and thinly sliced jalapeños (for garnish)
  • Sour cream (for garnish)
  • Chopped cilantro (for garnish)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat until shimmering.
  2. Add the ground beef to the hot oil. Season with salt and pepper. Cook until browned, breaking it up with a wooden spoon as it cooks.
  3. Once the beef is browned, stir in the onions, bell pepper, and garlic. Cook for about 4 minutes until the veggies are softened.
  4. Stir in the chili powder, ground cumin, dried oregano, and smoked paprika. Cook for another minute to bloom the spices.
  5. Add the tomato paste and diced fire-roasted tomatoes; stir to combine and cook for an additional 3 minutes.
  6. Pour in the beef broth (or beer + broth), scraping up any browned bits from the bottom of the pot. Add in the bay leaf.
  7. Bring your chili to a steady simmer. Reduce heat and let it simmer for 25 to 30 minutes, stirring occasionally.
  8. Remove from heat. Discard the bay leaf and taste for seasoning. Adjust salt and pepper as needed.
  9. Ladle into bowls and garnish with shredded cheddar cheese, jalapeños, sour cream, and chopped cilantro. Serve warm!
