  • Ground chicken or turkey
  • Green onions
  • Garlic
  • Ginger
  • Red bell pepper
  • Carrots
  • Cilantro
  • Peanut or hot sauce (for serving)
  • Lettuce leaves
  • 3 Tbsp low-sodium soy sauce
  • 2 Tbsp fish sauce
  • 2 1/2 Tbsp brown sugar
  • 2 Tbsp lime juice
  • 1 tsp sesame oil
  • 2 tsp cornstarch
  • 1 Tbsp olive oil or vegetable oil

Instructions

  1. In a mixing bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, sesame oil, and cornstarch. Set aside.
  2. Heat oil in a non-stick skillet over medium-high heat. Sauté the lighter parts of green onions with minced garlic and ginger until fragrant.
  3. Add ground chicken or turkey to the skillet and cook until nearly done.
  4. Stir in diced red bell pepper and matchstick carrots; cook for 2 minutes.
  5. Pour the sauce into the skillet and toss until thickened and chicken is fully cooked.
  6. Remove from heat; stir in cilantro, green onion greens, and peanuts. Serve in lettuce leaves with sauces on the side.
