  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/4 cups + 1 tablespoon sugar (divided)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F. Line two muffin pans with liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice; set aside.
  3. In another bowl, mix pumpkin puree, vegetable oil, eggs, and 1 1/4 cups sugar until combined.
  4. Gradually add the dry ingredients to the wet mixture and mix on low speed until just combined.
  5. In a small bowl, combine remaining sugar and cinnamon for topping.
  6. Fill muffin cups two-thirds full with batter and sprinkle tops with cinnamon-sugar mixture.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Cool in pans for five minutes before transferring to a wire rack.
