  • 2 x 5oz cans of tuna, drained
  • 1 medium onion, chopped
  • 1/2 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil, divided
  • 1/3 cup mozzarella cheese, shredded
  • Sliced bread (your choice)
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna, onion, celery, garlic, parsley, mayonnaise, olive oil, and mozzarella. Mix well and season with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Spread butter on one side of a slice of bread and place it butter-side down in the skillet.
  4. Scoop about 2 tablespoons of the tuna mixture onto the bread. Butter another slice of bread and place it on top (buttered side up).
  5. Grill until golden brown on one side; then flip carefully and grill the other side until crispy.
