  • 8 oz spaghetti or preferred pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach
  • Optional: red pepper flakes, salt, black pepper, chicken broth

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add shrimp and cook until pink (about 3–4 minutes). Remove from skillet.
  3. In the same skillet, add cherry tomatoes and optional red pepper flakes; cook until softened (about 5 minutes). Stir in fresh spinach until wilted.
  4. Return shrimp to the skillet along with chicken broth and reserved pasta water. Mix well before adding drained spaghetti; toss everything until evenly coated.
  5. Serve garnished with grated Parmesan cheese and fresh basil if desired.
