  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach
  • Salt and pepper to taste

  1. Cook spaghetti according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet over medium heat, warm olive oil and sauté garlic until fragrant (about 30 seconds).
  3. Add shrimp to the skillet, season with salt and pepper, and cook until pink (3-4 minutes). Remove from skillet.
  4. In the same skillet, add cherry tomatoes and cook until softened (about 5 minutes). Stir in spinach until wilted, then add chicken broth and simmer for 2-3 minutes.
  5. Return shrimp and pasta to the skillet; toss with reserved pasta water as needed for consistency. Serve hot.
