  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 medium red bell pepper, chopped
  • 2 (15 oz) cans dark red kidney beans, rinsed and drained
  • 1 (28 oz) can diced tomatoes
  • 4 tablespoons chili powder
  • 1 teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • 2 teaspoons olive oil
  • 1 ¼ cups chicken broth
  • 1 (15 oz) can sweet corn, rinsed and drained

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add chopped onion, minced garlic, and red bell pepper; sauté for 5–7 minutes until softened.
  2. Add ground turkey and cook until browned.
  3. Stir in chili powder, cumin, cayenne pepper, and salt; toast spices for about 20 seconds.
  4. Add diced tomatoes, chicken broth, kidney beans, and corn; stir to combine and bring to a boil.
  5. Reduce heat to low and simmer for 30–45 minutes until thickened. Adjust seasoning to taste.
