  • 3/4 pound lean ground turkey (93%)
  • 4 garlic cloves, minced
  • 1 teaspoon chili powder
  • 1 cup canned crushed tomatoes
  • 1/4 cup grated pepper Jack cheese
  • Fresh parsley for garnish

Instructions

  1. Pierce sweet potatoes with a fork and microwave for 8-10 minutes until tender. Allow them to cool.
  2. Cut sweet potatoes in half, scoop out the flesh, and mix with olive oil, cumin, salt, and pepper. Fill potato skins with the mixture.
  3. In a skillet over medium-high heat, cook ground turkey until browned. Add garlic, chili powder, cumin, oregano, paprika, salt, and crushed tomatoes; stir and cook for one more minute.
  4. Spoon turkey mixture into each sweet potato skin and top with cheese. Broil for about 30 seconds until cheese is melted. Garnish with parsley before serving.
