  • 1 medium head cauliflower (about 4 cups florets)
  • 3/4 cup all-purpose flour (or gluten-free flour)
  • 1 cup Thai sweet chili sauce
  • 1 cup vegan mayo
  • 12 teaspoons sriracha (to taste)
  • 12 cups Panko bread crumbs

Instructions

  1. Preheat oven to 425°F (218°C) or air fryer to 400°F (205°C). Line a baking tray with parchment paper.
  2. In a medium bowl, mix flour, granulated onion, garlic, ginger, salt, and pepper. Gradually whisk in non-dairy milk until smooth.
  3. Dip each cauliflower floret into the batter, then coat in Panko breadcrumbs.
  4. Arrange on the baking tray with space between each piece. Bake for 15 minutes; flip and bake for another 15 minutes until golden brown.
  5. For air frying, cook in batches for 15–25 minutes until crispy.
  6. While cooking, mix Thai sweet chili sauce, vegan mayo, and sriracha in a small bowl until smooth.
  7. Toss cooked florets in bang bang sauce and serve immediately.
