  • 2 tablespoons canola oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 pound 90% lean ground beef
  • 1 (1-ounce) packet taco seasoning
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup salsa
  • 1 (9.25-ounce) bag corn chips (Doritos or Fritos)
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat canola oil over medium heat. Sauté diced onion until softened; add minced garlic and cook for another minute.
  3. Add ground beef; cook until browned. Drain excess fat and stir in taco seasoning.
  4. Mix in black beans and salsa; heat through.
  5. Grease a 9×13-inch baking dish. Layer half of the corn chips at the bottom, followed by half of the beef mixture and half of the cheese. Repeat layers.
  6. Bake for 15-20 minutes or until cheese is melted and bubbly.
