  • 3 Tbsp sherry vinegar
  • 3 Tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 watermelon (approx. 9 cups), divided
  • 1 cucumber, seeded and diced
  • 1 red bell pepper, seeded and chopped
  • 3 roma tomatoes, seeded and diced
  • 1/4 red onion, diced
  • 1 jalapeño, seeded and diced small
  • Fresh basil and parsley for garnish

Instructions

  1. In a mixing bowl, whisk together sherry vinegar, olive oil, salt, and pepper.
  2. In a blender, combine 4.5 cups of watermelon with half of the cucumber, bell pepper, two roma tomatoes, and red onion. Blend until smooth.
  3. Slowly stream in the vinegar mixture while blending to incorporate flavors.
  4. Pour the base into a large container and stir in remaining watermelon, cucumber, bell pepper, one diced tomato, jalapeño, basil, and parsley.
  5. Adjust seasoning if desired and enjoy cold!
