  • 1/2 cup all-purpose flour (for crumble)
  • 1/2 cup brown sugar (for crumble)
  • 1 teaspoon cinnamon (for crumble)
  • 1/2 cup quick oats (for crumble)
  • 1/4 cup unsalted butter (melted, for crumble)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • boiling water (for water bath)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Prepare a 9-inch springform pan by wrapping it in tin foil and lightly greasing it.
  3. In a mixing bowl, combine graham crumbs, brown sugar, cinnamon, and melted butter; press into the bottom of the springform pan.
  4. For the apple filling, peel and slice the apples, then toss with brown sugar and cinnamon.
  5. In another bowl, beat together room-temperature cream cheese, sugars, vanilla extract, sour cream, cornstarch, and eggs until smooth.
  6. Layer half of the apple filling over the crust, pour in the cheesecake batter, and top with remaining apples.
  7. Prepare a water bath by placing the springform pan in a larger baking dish filled with boiling water.
  8. Bake for approximately 60 minutes or until set; cool gradually in the oven.
  9. Chill for several hours before serving with a drizzle of salted caramel.
