  • ¾ cup unsalted butter
  • ½ cup Biscoff cookie butter spread
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • ⅔ cup white chocolate chips
  • 68 Biscoff cookies

Instructions

  1. Preheat oven to 350°F. Grease a 9” x 9” pan and line with parchment paper.
  2. In a bowl, mix melted butter, cookie butter, brown sugar, and granulated sugar until combined. Add eggs and vanilla; mix well.
  3. Gradually add flour, baking powder, salt, and cinnamon; stir until just combined. Fold in white chocolate chips.
  4. Pour batter into the prepared pan. Top with broken Biscoff cookies.
  5. Bake for 30-35 minutes until edges are golden and a toothpick comes out with moist crumbs.
  6. Cool completely before cutting into squares.
