  • 1 cup graham cracker crumbs
  • 4 tbsp butter (melted)
  • 10 oz semi-sweet chocolate (chopped)
  • 16 oz cream cheese (softened)
  • 2 cups heavy cream (room temperature)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2/3 cup creamy peanut butter
  • 6 oz semi-sweet chocolate (for ganache topping)
  • 1/4 cup heavy cream (for ganache topping)

Instructions

  1. Prepare 12 baking cups or mini springform pans.
  2. Combine graham cracker crumbs and melted butter; press into the bottom of the cups and chill.
  3. Melt the first batch of chopped chocolate in a microwave-safe bowl.
  4. Whip together softened cream cheese, powdered sugar, and vanilla; slowly add heavy cream until thick.
  5. Fold melted chocolate into two-thirds of the mixture; spread over chilled crust.
  6. Mix remaining filling with peanut butter; layer on top of chocolate filling.
  7. Prepare ganache by melting second batch of chocolate with heavy cream; drizzle over cheesecakes.
  8. Garnish with chopped peanuts and mini chocolate chips; chill before serving.
