  • 4 large potatoes, peeled and diced
  • 3 garlic cloves, minced
  • 2 thick bacon strips, cut into pieces
  • 2 tablespoons honey
  • ½ teaspoon salt
  • 1 teaspoon cracked black pepper
  • Olive oil for roasting
  • Chopped parsley for garnish

Instructions

  1. Boil potatoes in salted water for about 8 minutes until just tender. Drain and set aside.
  2. Preheat your oven to 400°F (200°C) and lightly oil a rimmed baking sheet.
  3. Spread the drained potatoes on the baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 30 minutes, flipping halfway.
  4. In a skillet over medium heat, cook bacon until crispy. Add minced garlic for one minute before stirring in honey.
  5. Pour the honey-bacon mixture over the roasted potatoes and toss to coat evenly. Return to the oven for another 10–15 minutes until caramelized.
  6. Remove from the oven, sprinkle with chopped parsley, and serve warm.
