Scale
  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 4 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/4 cup thick caramel sauce
  • Flaky sea salt for topping

Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, granulated sugar, and vanilla until smooth. Refrigerate for 15 minutes.
  2. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Cream butter with both sugars until fluffy; mix in egg and vanilla. Gradually add dry ingredients until just combined.
  3. Scoop dough, flatten into discs, place cheesecake filling inside, then reshape into balls. Chill assembled cookies for 20–30 minutes.
  4. Preheat oven to 350°F (175°C). Bake cookies on parchment-lined sheets for 10–12 minutes until edges are golden. Cool slightly before adding toppings.
