  • 1 lb. rotini pasta
  • 3.54 oz. quartered pepperoni
  • 4 oz. quartered salami
  • 1 pint halved cherry tomatoes
  • 1 cup halved black olives
  • 1 orange bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • ½ cup finely diced red onion
  • 2 tablespoons chopped pepperoncini
  • 8 oz. fresh mozzarella pearls
  • Homemade Italian dressing

Instructions

  1. Prepare the homemade Italian dressing and refrigerate.
  2. Cook rotini pasta in salted water according to package instructions; drain and transfer to a mixing bowl.
  3. Pour half of the dressing over warm pasta and toss to combine.
  4. Add remaining ingredients: pepperoni, salami, cherry tomatoes, olives, bell peppers, red onion, pepperoncini, and mozzarella; mix well.
  5. Chill in the refrigerator for at least 30 minutes before serving; drizzle with remaining dressing and garnish with parsley and Parmesan.
